Our salt cod trimmings are from Icelandic origin but salted and carefully prepared by Bacalaos Alkorta in Gipuzkoa, a family owned salt cod specialist with more than 40 years of experience. Bacalaos Alkorta are one of the most prestigious companies in this sector and supply some of the best restaurants in Spain. This is 'extra' quality salt cod loin, so the quality is the best available. The meat is particularly thick and tender and there are very few small bones to pick out. The cod is salt-cured in the traditional Spanish way in Gipuzkoa for 21 days using pure, natural sea salt. Keep refrigerated - once opened maintain storage in the refrigerator and use within 3 months. 1 year shelf life from date of manufacture

Had ordered the salt cod loin but instead received salt cod trimmings however this was resolved by staff very quickly. Great customer service.

Fish seems fine, only issue is that you pay for next day delivery when it tends to arrive about a week later despite it saying its in stock.

I’m going to give it 3 stars due to the different between loin sizes. When you buy a whole sled cod piece you assume differences between parta of the cod. However when buying 2 loins I expected similars and they weren’t. One ok the other one half thick. What means you have to dewater it separately or screw up your dish. Taste was very good, it flaks perfectly (the thick one) and it is a good salted cod. I’ll prefer to choose between expeding a bit more but two thick loins or a bit less and still have thinner ones and cheaper. Top flavour

Lovely bacalao. My second attempt at bacalao al pil pil. I still couldn’t manage the aioli type sauce from whisking it with a sieve but it was delicious nonetheless. Practice will hopefully make perfect!
