Morcilla de Burgos is a very popular Spanish black pudding that is used either as a tapas dish in its own right or as an ingredient in other meals. Produced in Burgos in northern Spain, the process of adding rice was originally done to bulk out the sausage, but the unique flavour became very popular and adds a very unique twist and has become a signature dish. Morcilla de Burgos goes very well with other flavours such as roasted apples, or piquillo peppers. However it is versatile enough for an experimental chef to use it with a range of dishes, from pasta to poultry, game to garnish. At our recent tapas night this was the most raved about dish. Everyone, without exception loved this. Simply fried in Spanish olive oil with cubes of bread.

Delicioso! Genuine morcilla made with rice is a treat. I find it lighter and less greasy than the British oatmeal black pudding and this one is full of flavour.

We entertained friends over the weekend and I copied the recipe of the picture, it was the best tapas dish of the evening, the pudding is much lighter that an English black pudding but still carries a lot of the flavour. It’s going to be a regular from now on.
