Morcilla de Burgos is a very popular Spanish black pudding that is used either as a tapas dish in its own right or as an ingredient in other meals. Produced in Burgos in northern Spain, the process of adding rice was originally done to bulk out the sausage, but the unique flavour became very popular and adds a very unique twist and has become a signature dish. Morcilla de Burgos goes very well with other flavours such as roasted apples, or piquillo peppers. However it is versatile enough for an experimental chef to use it with a range of dishes, from pasta to poultry, game to garnish. We buy this very year when we holiday in Spain and are so delighted to find that we can order it from Basco. It's so tasty. Lovely served with pea puree and scallops.

My wife loves Black Pudding, and she thinks this is the best and so do I. There is no going back from now, we only want the best and this is it.
