Morcilla de Burgos is a very popular Spanish black pudding that is used either as a tapas dish in its own right or as an ingredient in other meals. Produced in Burgos in northern Spain, the process of adding rice was originally done to bulk out the sausage, but the unique flavour became very popular and adds a very unique twist and has become a signature dish. Morcilla de Burgos goes very well with other flavours such as roasted apples, or piquillo peppers. However it is versatile enough for an experimental chef to use it with a range of dishes, from pasta to poultry, game to garnish. This is the morcilla you buy in Spain in the same places that the locals do, a northern Spanish type Morcilla with rice. It is mildly spiced, and full of flavour. I slice mine, freeze it and cook it straight from frozen in the oven as needed. So delicious on scrambled eggs for a breakfast :)

Absolutely fabulous. Totally different texture from black pudding with no large lumps of fat. I tried this in Spain years ago and was so pleased to find that I could order it online. Only problem is that when I open a pack I don’t eat anything else until it’s all gone!

Having visited the area for work it was great to fin this quality from Basco, it really is great with fried eggs and potatoes, do it like I have had it in Spain cook up a load and then place in a bowl or serving dish and slice through all three ingredients and share with friends or family. Great dish.
