San Simón da Costa cheese is cone shaped and made with pasteurised cow's milk from a mixture of Galician Blonde, Swiss Brown and Fresian cows. It is matured for 45 days and smoked over local birch wood chips to give a deep yet delicate smoky flavour. It has a hard ochre coloured rind and a smooth, dense, yellow paste. The texture is elastic, easy to cut and melts beautifully. This cheese is pasteurised.
